The Agour cheese dairy is situated at the bottom of Mt. Baigura in the heart of French Basque Country. Their Agour Petite Brebis Pimento is an artisan semi-hard sheep milk cheese that has a natural rind which is covered with pimento in the later stages of affinage. The pâté is dense with little elasticity, yet retains a soft melting creamy texture in the mouth when chewed. The cheese is full with complex flavours on the palate.
