(6.20oz/150g). Made by Sevre et Belle (Poitou-Charentes, France) – First created in the eighth century, this cylindrical cheese has a hard, yet edible rind and a subtle goat’s milk flavor. It is cream-colored, moist, and crinkly on the outside. Its texture and pâte are like that of a very young Crottin. Nice acidity, and seems to be a bit less minerally than some goat’s milk cheeses.
